I have another paleo recipe for you today, friends, except it’s not mine. I just followed the directions laid out for me on PaleOMG, except the one lemon that sat on our table for far too long disappeared (aka my roommate actually throws things out when they go bad), so my pesto went without lemon nectar. It was still really, really ridiculously good tasting. I’ll be honest with you, I had no idea what pesto was made of before checking out this recipe. Apparently I ingest green goo without asking questions? Anyway, it’s basil leaves that make it green and instead of pine nuts this recipe calls for almonds. And, for us humble folk who don’t own fancy kitchen equipment, almonds can be crushed up in a cheapo blender from Target. I tested it so you don’t have to take any chances. Besides that, it’s chicken and butternut squash covered in delicious green goodness. I highly recommend you make this dish. Follow the directions here and you can’t go wrong.
Here’s my week in fitness:
S – 2-mile run, love your arms (x3), love handles
T – 1 hour walk
W – 4-mile run, love your arms & abs (x2)
T – 5.5-mile walk
Happy Friday!
