You know how when you can’t have something (i.e. sugar), your mind races constantly with all the things you’re missing out on? That’s about where I’m at now. I decided I was going to get around it by attempting a vegan, sugar-free baked apple (a less fattening & artery-clogging version of the buttery, brown sugary version my mom used to make for us). Notice how I only made one just in case it turned out gross (luckily, it didn’t!).
(Isn’t that a good looking apple?! It’s organic – aka, delicious.)
After reading several different baked apple recipes from here, here and here, I decided to make my own little combination using these ingredients:
(Dairy-free butter – Earth Balance & sugar-free sweetener – Truvia)
First I cored the apple with a paring knife and preheated the oven to 350 degrees, then proceeded to combine 1 tablespoon of earth balance butter with a few shakes of cinnamon and ground nutmeg & gooped it into the hole in the apple.
Then I added a little bit of hot sink water to the glass baking dish & put the apple into the oven for about about 30 to 40 minutes.
Before you know it, it looks like this:
It was way better than I expected it to be, guys. Of course brown sugar would have made it that much better, but as far as a sugar-free dessert goes this bad boy was awesome. After scarfing this thing down, I went to see my cousin’s dog’s litter of puppies – which need homes!!
