The setting: Gainesville, FL circa 2009 in my apartment that I shared with three of my best friends.
The mood: Nervous, spending my first Valentine’s Day ever with Austin (or Austi Spimonti Winkleman Mitati as we often called him at that time) since we started dating in January. My roomies and I decided we needed an awkward prom-pose photo preceding dinner, resulting in this masterpiece.
Surprises
I don’t know about you guys, but I love surprises. They make me all warm and fuzzy inside, and if Valentine’s Day isn’t about warm and fuzzies, I don’t know what it’s about. I answered the phone in my man voice this morning when Austin told me he was here. I opened the door to him, a dozen roses and grocery bags full of breakfast fixin’s.
I hope you’re all pleasantly surprised today.
Silence! I Keel You!
I know I planned on dedicating the weekend to cleaning and studying, but… In addition to running 9 miles, cooking delicious food, reading (and otherwise procrastinating from cleaning my room/studying)…
I went to go see Jeff Dunham last night!!! For those of you who don’t know who he is, he’s an awesome ventriloquist and my nephew just so happens to be a huge fan, so my sisters got him tickets to see him perform live in Daytona for his birthday. (Un)Fortunately my sister, Britni, got sick at the last minute and was unable to go, soooo this guy got to go instead!
We ate at Johnny Rockets, goofed around for my iPhone camera, played Temple Run (It’s a big hit with 11-year-old boys too, go figure!), bought cotton candy and laughed our booties off as J.D. talked to himself in many different voices all with his mouth closed. So cool. Now I can cross “See live ventriloquist” off my bucket list. I’d call that a win. Check below for some lawling at the expense of Peanut and Jose the Jalapeno.

Dear iPhone, thanks for having a reversible camera that allows me to look at myself while taking a picture. Greek-Style Stuffed Peppers
One night quite a while ago, I realized it was around 10 p.m., I hadn’t eaten dinner yet, I was really hungry and I had exactly one green pepper in the fridge. My mom often makes stuffed peppers with ground beef and all kinds of deliciousness (including cheese that I can’t eat), but since I like to experiment with vegetarian/dairy-free cooking I decided to try out my very own Greek-style stuffed pepper after looking at various ways of going about it online. I was a little nervous about how it would turn out because even though I like to try new recipes all the time, I don’t usually make up my own, but I was assured by the fact that if it was, in fact, a total failure, I was only making one solitary pepper and I’d be the only one suffering through the task of eating. Fortunately for you, my friends, it turned out really well and I plan to make more as soon as we stock up on peppers again.
First I cut off the top of the green pepper and gutted it. Then I boiled a pot of water and submerged the pepper in it to get it soggy without having to put one lonesome pepper in the oven (perhaps three minutes? I’d just take them out whenever they feel like the sort of consistency you want in your mouth. That’s what she said?) Then I used that very same boiling water to cook the brown rice, it only takes about 10 minutes and it’s very convenient. I am a big fan of boil-in-a-bag rice, maybe that just makes me lazy. Then I added all the goodies to the rice and scooped it all into the pepper, and by all I definitely don’t mean all; there was a lot left over which I thoroughly enjoyed eating green-pepper-less the next day.
